Yummy nacho dip!

I was in the mood for nacho dip and chips, and decided to make it a bit more interesting than my usual Velveeta-ish cheese with salsa, so I put in a couple scoops of my chili. Now it has meat, beans, and veggies in it! I drained as much of the liquid as I could from the scoops before putting the chili in, but it's still a little runny. Not too much worse than usual, though. In a bit it will start to solidify again. But it's yummy!

Long ago figured out a trick with velveeta-ish cheese: don't try to melt it all at once, comes out horrible that way. Nuke it for a minute, stir, nuke another minute, stir, then nuke one more minute and serve. (Three minutes straight will only end up with most of it on the bottom of the microwave, and what is left in the microwave sucks.) That 1-minute-then-stir method makes EXCELLENT dip.

Another great dip is to cut up velveeta and dump a drained can of chili into a crock pot - seems to melt down nicely without frying the edges. We have this at EVERY family event, and it's always a hit.
