I find it odd that Starfleet always buries their dead in space by loading them into a photon torpedo and shooting them away. I don't mean to seem uncaring, but given the realities of space travel, especially the Voyager lost in the Delta Quadrant, you'd think they would put the bodies into a matter reclamation unit and use that matter for their replicators. After all, the way I understand it, the replicators don't make something out of nothing... they have matter storage tanks and assemble the food/clothes/whatever using matter from those tanks. So why doesn't Starfleet recycle its dead? With as many Starfleet people who die on the shows, it would save them a lot of resources.

Given that all the elements in the human body are easily found on most planets (except for the volatiles, which are easily found in comets and other iceballs) what's the point?

Running out of "feedstock" for the replicators was never an issue except for a few rare elements. Not having the power to run them a lot was the big issue (and one of the things they actually "got right"_

Well, they don't "always" do it anyway. In the second pilot for the original series, they buried some folks in the ground on a planet. I think they did that elsewhere as well.

I don't expect ships get lost often with their advanced technology. As for Voyager (and the other star fleet ship lost in the same quadrant, which was on for an episode or two and then the Klingon ship even old as it was), star fleet ships are very adaptable, able to find what they need on other planets and trade. So... I guess what they got from one body isn't enough that much anyway and it couldn't be too fancy if they were lost 75 years away from the Federation. Special honor and celebration of their dead also acts as motivation and inspiration which would be needed in that situation.
