Canning vegetables really is generally a horrible idea. The only good canned veggies are corn, black or pinto beans, and tomatoes, because they taste pretty much exactly the same as the fresh stuff. Oh, and canned spinach is good too, but I prefer fresh spinach. All other canned veggies are vile. The worst three are canned green beans, canned mushrooms, and canned potatoes. Even my parents, who used canned veggies all the time, wouldn't use canned potatoes because they are absolutely disgusting. I would have to be starving to death before I'd choke down that shit.
As to green beans, I can't eat them either cooked OR fresh. My only objection to the fresh ones is that they're fuzzy, like peaches. I can't stand peaches, either, for the same reason. The fuzz tickles my mouth and I hate it.
EDIT: No wait, canned peas are almost as bad as canned potatoes.
