Actually, since you need several thousand miles of "rock" in a flat plate to generate 1 gee away from the edges, things like Mt Everest or the Marianas trench are minor (1 part in a thousand) variations that don't really affect things much.

The fun bits are that to avoid edge effects the flat disk would have to millions of miles across (ok, maybe only hundreds of thousands).

The mere fact that the sun is at different angles from the horizon at different points on the surface of Earth at the exact same time means that the surface can't be flat.

With an insanely *huge* disk, you can have a hole in the middle and have the sun bob up and down thru it.

alas, simple math shows that if the sun reaches a 45 degree angle at the highest and is 1 AU above the center of the disk (so the temps work out about right) it'll take 48 hours between that high point and sunset. (I'd have to dig up the figures again for the whole day/night cycle).
